Ingredients
300 g (about 10.5 oz) pumpkin, 5 preserved sour plums, 75 ml (about 1/3 cup) boiling water.
Seasonings
150 g (about 5.3 oz) white vinegar, 150 g (about 5.3 oz) white sugar, 1 teaspoon salt.
Instructions
1. Peel the pumpkin and slice it thinly, then marinate with 1 teaspoon of salt for 10 minutes until softened, rinse off the salt with cold boiled water, and drain well before using.
2. Pour water and sugar into a pot, add the preserved plums, and heat until the sugar dissolves, then immediately turn off the heat. Add white vinegar—be sure to use low heat when simmering the liquid, otherwise it will easily burn around the edges of the pot.
3. Once the sauce has cooled, add the pumpkin slices and let them soak for about 8 hours before serving.
