Ingredients
10 kg (about 22 lbs) fresh beef shank.
Seasonings
2000 g (about 4.4 lbs) soy sauce, 1000 g (about 2.2 lbs) ginger, 500 g (about 1.1 lbs) each scallions and cooking wine, 75 g (about 2.6 oz) star anise, 50 g (about 1.8 oz) cardamom, 25 g (about 0.9 oz) each cloves and white sugar.
Instructions
1. Wash the beef and cut it into cubes; peel the scallions and cut into sections; wash and peel the ginger, then crush it in a mortar and strain to extract the juice.
2. Grind the star anise, amomum fruit, and cloves into a powder, then combine with soy sauce and cooking wine in a bowl with the beef. Marinate for about 4 hours. Transfer everything to a pot, cover, and bring to a boil over high heat. Reduce to the lowest heat and simmer until the beef is about 80% cooked, then add white sugar and continue cooking until the liquid is fully absorbed. This dish has a rich brown-red color and a deep, lasting savory aroma.
