500 g (about 1 lb) Chinese scallions or large green onions

Vegetable oil as needed, 150 g (about 3/4 cup) white sugar, 100 g (about 1/2 cup) sesame oil, 50 g (about 1/4 cup) white vinegar, 3 g (about 1 teaspoon) MSG.
Instructions
1. Cut the scallions into 6 cm (about 2.5 inch) sections.
2. Heat the oil over high heat until it reaches 70-80% hot, then add the scallions and fry until light golden brown. Remove and transfer to a clay pot. Add 50 g (about 1/4 cup) of water, sesame oil, MSG, and white sugar. Simmer over low heat until the sauce reduces and thickens, then stir in white vinegar. Let cool, plate, and serve. This dish has a light golden color and a fragrant, sweet-and-sour flavor.
