Ingredients
Half a Sanhuang chicken (about 500 g / 1 lb), 10 g Sichuan pepper oil.
Seasonings
Chopped scallions 15 g, red bell pepper 8 g, fine salt 5 g, MSG 6 g, fried peanuts, sesame seeds, ground white pepper, and chili oil, each to taste.
Instructions
1. Wash the three-yellow chicken thoroughly, place it in a pot of cold water with scallions, salt, and ginger, then simmer over low heat for 10 minutes. Remove the chicken, let it cool slightly, then chop it into pieces and arrange on a serving plate.
2. Sauté the chopped scallions in the pan until fragrant, then add Sichuan pepper oil, red bell pepper, and other seasonings, stir to combine, and pour the mixture over the chicken arranged on a serving plate. This dish is rich with the aroma of scallions and Sichuan pepper, offering a balanced and pleasant numbing spiciness.
