Ingredients
Spinach and spiced dried tofu, both to taste.
Seasonings
to taste: toasted sesame seeds, salt, sesame oil, chili oil, white vinegar, and minced garlic.
Instructions
1. Blanch the spinach in boiling water for 10 seconds, then remove, squeeze out excess water, and chop finely; also blanch the seasoned pressed tofu in boiling water, then chop finely.
2. Combine the spinach, toasted sesame seeds, and seasoned dried tofu. Season with salt, minced garlic, sesame oil, chili oil, and white vinegar, then toss well to mix.
3. Fill a cup with the mixed and seasoned spinach, press it down firmly, then gently invert the cup onto a plate to release the spinach tower.
