Stir-Fried Shredded Tofu Skin with Yellow Chives

Ingredients

200 g (about 7 oz) hotbed chives, 100 g (about 3.5 oz) spiced dried tofu.

Seasonings

Sesame oil 15 g (about 1 tablespoon), salt 8 g (about 1½ teaspoons), white sugar 5 g (about 1 teaspoon), MSG 1 g (about ¼ teaspoon).

Instructions

1. Wash the yellow chives, blanch them briefly in boiling water, quickly turn them over, blanch for about 3 more seconds, then remove and place in a bamboo basket, shaking off as much water as possible. Cut into 3 cm (about 1.2-inch) sections, place in a dish, and while still hot, toss with salt and MSG; the quick blanching in boiling water gives the yellow chives a slightly crisp texture and fragrant aroma.

2. Cut the spiced dried tofu into thin strips, scatter them over the hotbed chives, drizzle with sesame oil, and toss to combine. This dish features chewy dried tofu with a refreshing, clean flavor.
