Tossed Green Beans with Hot Oil Dressing

Ingredients

Several long beans.

Seasonings

Garlic, scallions, toasted white sesame seeds, dried chili peppers, salt, and MSG (or chicken bouillon), all to taste.

Instructions

1. Wash and trim the long beans, then cut them in half crosswise; mince the garlic and scallion; snip the dried chili peppers into small pieces and set aside.

2. Bring a pot of water to a boil, add a pinch of salt and a drizzle of cooking oil to keep the beans vibrant, then blanch the long beans for 3 minutes, remove and immediately plunge into cold water to cool.

3. Remove the long beans, drain, and cut into segments. Season with salt and MSG, then arrange on a plate. Layer with chopped scallions, minced garlic, and chili segments on top. Pour sizzling hot oil over the aromatics to release their fragrance, then sprinkle with toasted white sesame seeds. The oil must be very hot to properly bloom the scallions, garlic, and chili.
