Candied Apple Slices

Ingredients

250 g (about 1/2 lb) apples.

Seasonings

15 g each of green and red candied fruit strips, 10 g toasted sesame seeds, 1000 g (about 2.2 lbs) lard for deep-frying, plus sugar, egg whites, cornstarch, and flour to taste.

Instructions

1. Wash and peel the apples, cut into quarters, remove the cores completely, then cut into irregular chunks (rolling knife cut). Lightly dust with flour; mix egg white with cornstarch to form a batter, then add the apple chunks and toss to coat evenly.

2. Add lard to the wok and heat to 300-350°F (medium-high), then add the coated apple pieces one by one, frying until light golden brown, then drain the oil.

3. Add a small amount of oil and water to the wok, then add the sugar and cook until it turns light yellow and bubbly and can form threads, then add the fried apple pieces, remove from the heat, and while tossing the wok, sprinkle in candied green and red fruit strips and sesame seeds, coating everything evenly with the syrup before transferring to a plate; serve immediately with a bowl of cold water on the side for dipping.
