Celery Salad

Ingredients

1000 g (about 2.2 lbs) of fresh, tender celery.

Seasonings

5 g each of sesame oil, salt, soy sauce, and vinegar.

Instructions

1. Remove the leaves from the celery, trim off the root ends, wash thoroughly, cut into 5 cm (about 2-inch) sections, blanch in boiling water, then remove and arrange on a plate.

2. Sprinkle with salt and mix well. Just before serving, drizzle with soy sauce, vinegar, and sesame oil—or for even better flavor, use Sichuan peppercorn oil. Do not add the vinegar too early, or the celery will turn yellow. This dish is bright green, tender, fragrant, and nutritious.
