400 g (about 14 oz) pork tenderloin
Seasonings
25 g (about 2 tablespoons) cooking wine, 25 g scallions, 25 g (about 2 tablespoons) sesame oil, 15 g ginger, 7 g salt, 5 g MSG.
Instructions
1. Use a bamboo skewer to poke many small holes in the meat (to help the flavors penetrate and speed up cooking), then rub it evenly with salt and MSG. Place the meat in a container, add cooking wine, scallions, and ginger, and marinate for about 2 hours.
2. Place the marinated meat on a baking sheet and roast in the oven, keeping an eye on it to prevent burning; if the color becomes uneven during roasting, cover the darker areas with vegetable leaves and continue roasting, brushing with sesame oil when nearly done, and roast until evenly colored and fully cooked through; when serving, slice and arrange on a plate. This dish is savory and aromatic, with tender, delicate meat.
