Ingredients
Bitter melon and salted egg yolks, both to taste.

Honey to taste.
Instructions
1. First, steam the salted eggs until fully cooked, then remove the yolks and mash them with a small spoon.
2. Cut one bitter melon into four sections; use a small knife to remove the inner seeds and pith, then bring a pot of water to a boil with a pinch of salt and a little oil, add the bitter melon pieces and cook for 2-3 minutes, then transfer them to cold water to keep the bitter melon crisp and refreshing.
3. Stuff the salted egg yolks into the hollowed bitter melon.
4. Cut the bitter melon segments stuffed with salted egg yolk into thick slices, and when serving, add a drop of honey to each slice.
