Ingredients
1000 g (about 2.2 lbs) napa cabbage
Seasonings
25 g soy sauce, 25 g sesame oil, 8 g salt, 15 g ginger, 10 g white sugar, 4 dried red chili peppers, vinegar to taste.
Instructions
1. Remove the outer leaves from the napa cabbage, wash it, and cut it straight into strips about 3 cm (1 inch) thick and wide. Toss with salt, let it marinate, then drain. Rinse off the salt with cold boiled water, drain well, and place in a bowl.
2. Then dissolve the white sugar, soy sauce, and vinegar together and pour the mixture over the cabbage. Cut 2 chili peppers and the ginger into thin strips and scatter them on top of the cabbage.
3. Heat sesame oil and fry the remaining 2 dried chilies until golden, then pour everything into the bowl, cover and let sit for 10 minutes. This dish is spicy, crunchy, and refreshing, perfect with both drinks and rice.
