Ingredients

200 g (about 7 oz) rabbit meat.

Seasonings

20 g goji berries, 20 g ginger-scallion juice, 3 eggs, 3 g cornstarch, 4 g salt, 2 g MSG (or omit), 1 g white pepper, 10 g Shaoxing wine, 10 g oil, 15 g sesame oil.

Instructions

1. Wash the goji berries; mince the rabbit meat into a fine paste; combine the minced rabbit with goji berries, scallion-ginger juice, 3 g salt, MSG, white pepper, cooking wine, and sesame oil, then add 2 egg whites and stir vigorously in one direction until the filling is well mixed.

2. Crack the remaining egg yolks and whole egg into another bowl, add the starch and the rest of the salt, and whisk thoroughly until well combined.

3. Pour the beaten eggs into an oiled pan and spread into a thin omelet; cut the omelet in half, spread the rabbit filling on one half, and roll it up into a log.

4. Place the rabbit rolls in a steamer and cook until done, then remove; slice the rabbit rolls diagonally into segments and arrange them on a plate to serve. This dish features a white exterior with a hint of red, an elegant presentation, and a tender, savory flavor.
