Crispy Fried Zucchini Strips

Seasonings

White sugar, salt, white vinegar, Sichuan pepper oil, dried chili peppers, and ginger strips, all to taste.

Instructions

1. Wash the cucumber, then cut it into finger-shaped strips; cut the dried chili peppers into sections.

2. Salt the cucumber and let it sit for about 20 minutes, then rinse thoroughly with water.

3. Add dried chili peppers and ginger shreds to the Sichuan pepper oil, cook until fragrant, then pour the hot oil over the prepared cucumber strips.

4. Add sugar to taste, then drizzle with white vinegar just before serving. This dish is crisp and tender, with a delightful balance of sweet, sour, spicy, and aromatic flavors.
