Recalling Bitterness, Tasting Sweetness

Ingredients

1 bitter melon, 1 piece of hawthorn cake.

Instructions

1. Cut the bitter melon crosswise into sections and remove the seeds and pith; bring a pot of water to a boil, blanch the bitter melon pieces in the boiling water, then immediately rinse them under cold water to cool.

2. Cut the hawthorn cake into rectangular pieces slightly larger than the diameter of the bitter melon, trim off the four corners to shape it into a cylinder, and fill the bitter melon core with the cylindrical hawthorn cake.

3. Slice the bitter melon and arrange on a plate. For better flavor, drizzle with a little honey water or fruit juice on top.
