Ingredients
300 g fresh enoki mushrooms (about 10 oz)
Seasonings
Salt, MSG, Sichuan pepper oil, chili oil, sugar, scallion, and cilantro, all to taste.
Instructions
1. Wash the scallions and cilantro, then chop them into finely minced scallions and cilantro pieces and set aside.
2. Trim the root ends off the enoki mushrooms, then separate them into small clusters and rinse clean.
3. Bring water to a boil in a pot, add the enoki mushrooms and blanch for about 30 seconds, then remove and rinse under cold water, followed by a final rinse with cool boiled water, drain well and squeeze dry with your hands.
4. Place in a large bowl, add salt, sugar, and MSG to taste, then stir in Sichuan pepper oil, chili oil, chopped scallions, and cilantro, mixing well before serving.
