Sesame Spinach Salad

Instructions

1. In a bowl, combine sesame paste, minced scallion, minced ginger, mashed garlic, salt, MSG, sesame oil, and vinegar, stirring well to create a dressing; select small, uniform spinach leaves, discarding any old leaves, trim the roots, and wash thoroughly.

2. Bring a pot of water to a boil, blanch the whole spinach briefly, then transfer to cold boiled water to cool. Squeeze out excess water and arrange the spinach neatly on a plate. Serve alongside the prepared sauce and dip as you eat. This dish is beautifully vibrant green, refreshing, and light on the palate.
