Braised Rabbit with Sesame Seeds

Ingredients

1 rabbit (about 1000 g / 2.2 lbs), 30 g black sesame seeds, 500 g (about 2 cups) seasoned braising liquid.

Seasonings

10 g ginger, 10 g scallion, 2 g Sichuan peppercorns, 15 g sesame oil, 3 g salt, and MSG to taste.

Instructions

1. Wash the black sesame seeds thoroughly, then dry-fry them in a pan until fragrant; slaughter the rabbit, remove the skin, feet, and internal organs, rinse clean, place in a pot with enough water to cover, bring to a boil and skim off any foam, add ginger slices, scallion sections, Sichuan peppercorns, and salt, cook the rabbit until about 70% done, remove and let cool slightly, then transfer to a pot of seasoned marinade and simmer over heat for about four hours, remove and let cool, slice and arrange on a plate.

2. Mix the MSG and sesame oil together, drizzle over the dish, sprinkle with black sesame seeds, and toss to combine. This dish features reddish-brown rabbit meat with glossy black sesame seeds, offering tender, melt-in-your-mouth meat and a rich, nutty aroma. It is known for its nourishing properties, helping to enrich the blood, moisturize dryness, and replenish vital energy.
