500 g (about 1 lb) peeled potatoes

Vegetable oil 1000 g (about 4 cups, 1 L, actual consumption around 7.5 g / 1½ teaspoons), fine salt 5 g (about 1 teaspoon).
Instructions
1. Peel the potatoes and slice them into 1.5 mm thick rounds, soak in cold water and rinse to remove the starch, then drain thoroughly and set aside.
2. Place a wok over high heat and add vegetable oil. When the oil begins to smoke, scatter in the potato slices and fry over high heat until they firm up, then reduce the heat to low. Gently stir with a fork and continue frying until the potatoes turn golden and crispy. Remove, drain, and sprinkle with salt. This dish is golden, crispy, and delicious.
