Ingredients
500 g (about 1 lb) raw peanuts
Seasonings
25 g Sichuan peppercorns, 25 g star anise, 10 g salt, 12 g cardamom, 3 slices ginger.
Instructions
1. Pick over the peanuts, wash them, and soak them in warm water in a bowl for about two hours.
2. Add about 2-3 jin (1-1.5 kg or 2-3 lbs) of water to a pot, place over heat, and add salt, Sichuan peppercorns, star anise, cardamom, and ginger. Add the peanuts and cook until tender, then pour everything into a bowl along with the liquid. When ready to serve, simply scoop out the peanuts and plate them. This dish has a rich five-spice flavor and pairs perfectly with drinks or rice.
