Shredded Chinese Cabbage with Sesame Sauce

Ingredients

500 g napa cabbage (about 1 lb), 75 g fresh hawthorn berries, 25 g cold chicken broth.

Seasonings

100 g (about 3.5 oz) superfine sugar, 75 g (about 2.6 oz) sesame paste, 4 teaspoons fine salt.

Instructions

1. In a small bowl, combine sesame paste with 25 g (about 2 tablespoons) cold chicken broth, stirring until smooth to create the sesame dressing; set aside. Take the heart of a Napa cabbage, wash it thoroughly, shake off excess water, and slice into thin shreds. Add salt to taste, gently massage the cabbage, let it sit to release moisture, then squeeze dry and place in a large bowl.

2. Wash the hawthorn berries, cut them open to remove the pits, then slice them thinly and place them on one side of the bowl with the shredded Chinese cabbage, then sprinkle with about 100 g (about 1/2 cup) of powdered sugar.

3. Place the shredded cabbage in a leaf-shaped bowl, layer the hawthorn slices on top, and drizzle with sesame sauce. This dish is crisp and tender, with a savory flavor and a hint of sweetness.
