Stuffed Silver Melon

Ingredients

20 g each of silver melon, lotus seeds, and red adzuki beans.

Seasonings

15 g (about 1 tbsp) lard and 15 g candied green and red melon strips, 50 g (about 1/4 cup) sugar.

Instructions

1. Steam the lotus seeds until fully cooked; wash the red beans, steam them with water until soft, then remove the outer skins and grind into a smooth bean paste.

2. Peel the silver melon and cut off the stem end. Cut a 4 cm square opening in the middle, scoop out the seeds and pulp, then rinse clean with water. In a bowl, combine the sweet bean paste, lotus seeds, and lard with sugar, mixing well. Stuff this mixture into the melon, replace the cut piece to cover the opening, and steam until tender. Remove, let cool completely, then chill in the refrigerator (do not freeze).

3. Add white sugar and water to a wok, cook into a syrup, then let cool completely and chill in the refrigerator. When serving, sprinkle the melon with candied green and red fruit strips, then pour the chilled syrup over the top. This dish is refreshing, soft, sweet, and cool—an excellent summer dessert.
