Iced Silverfish

Ingredients

150 g Taihu Lake silverfish (small whitebait), 100 g ice cubes, and appropriate amounts of lemon, cucumber, and shredded white radish.

Seasonings

20 g each of wasabi and sashimi soy sauce.

Instructions

1. Rinse the silverfish (whitebait) clean, blanch them in warm water at 50°C (about 120°F), then transfer to ice water with lemon slices and let the silverfish soak for a while.

2. Place crushed ice in a bowl, arrange the silverfish on top, add shredded white radish and carrot along with lemon slices, garnish with edible flowers and herbs, and serve the seasonings on the side. This dish is refreshing and delicately flavored.
