Ingredients
500 g (about 1 lb) spinach, 2 pieces seasoned dried tofu, 10 g cooked salted lean meat.

Sesame oil 15 g (about 1 tablespoon), dried shrimp 15 g (about 1 tablespoon), white sugar 3 g (about 1 teaspoon), fine salt 8 g (about 1½ teaspoons), minced ginger 10 g (about 2 teaspoons).
Instructions
1. Remove any old leaves from the spinach, trim the root tips, and wash thoroughly. Blanch in boiling water until the water returns to a boil, then let it sit for a moment before removing. Squeeze out the excess water, chop into fine pieces, and squeeze out the water again. Place in a bowl, then mix evenly with salt and white sugar.
2. Rinse the dried shrimp to remove any dust and impurities, place them in a small bowl, add just enough boiling water to cover them, soak until softened, then finely chop; alternatively, steam them for 20 minutes for even better results; also finely chop the seasoned dried tofu and cooked salted lean meat.
3. Add the spinach, dried shrimp, spiced dried tofu, and cooked salted lean meat along with the minced ginger to the bowl, drizzle with sesame oil, and toss well to combine. This dish is savory and aromatic.
