Dry-Braised Beef

Learn how to make Dry-Braised Beef, a numbing and spicy Sichuan dish with tender beef, chili oil, and crushed peanuts. Perfect for pairing with rice or drinks.

Ingredients

150 g (about 5 oz) beef, 10 g (about 2 tablespoons) roasted peanuts.

Seasonings

10 g chili oil, 40 g soy sauce, 5 g scallion, 1 g each salt and white sugar, a pinch each of Sichuan peppercorn powder and MSG.

Instructions

1. Wash the beef, boil it in a pot of water until fully cooked, then remove and let cool before slicing; cut the scallions into 1-inch (2.5 cm) pieces; crush the peanuts into fine pieces.

2. Place the sliced beef in a bowl, first mix in salt to season, then add chili oil, sugar, soy sauce, MSG, and Sichuan pepper powder, mixing well. Finally, add scallions and crushed roasted peanuts (or toasted sesame seeds), toss everything together, and transfer to a serving plate. This dish is numbing, spicy, and aromatic—perfect with both drinks and rice.
