Honey-Glazed Pear Balls

Ingredients

500 g yellow pear (about 1 lb), 2 eggs.

Seasonings

500 g (about 1 lb) vegetable oil, 30 g all-purpose flour, 10 g cornstarch, 100 g honey, 200 g (about 1 cup) granulated sugar.

Instructions

1. Peel and core the pear, then cut it into thin shreds. Mix with egg white, starch, and flour until well combined, then shape into balls.

2. Deep-fry the pear balls in oil heated to 350°F (medium-low heat) until golden brown, then remove and drain on paper towels. Prepare caramelized sugar in the wok, add water and white sugar, return the pear balls and simmer over low heat to reduce the sauce. When the sauce thickens, stir in honey, drizzle with a touch of oil for shine, and plate.
