Ingredients
2 preserved duck eggs (century eggs), 300 g (about 10.5 oz) silken tofu.
Seasonings
Salt, vinegar, sesame oil, chili oil, light soy sauce, ginger, garlic, and scallion, all to taste.
Instructions
1. First, cut the tofu into small cubes; peel the century eggs and cut them into cubes as well; mince the ginger and garlic; chop the scallions. Bring a pot of water to a boil, add the tofu cubes along with a pinch of salt, cook for 2 minutes, then drain and let cool.
2. Place the minced ginger, garlic, and chopped scallions in a bowl, then add salt, light soy sauce, vinegar, sesame oil, and chili oil to taste, stirring well to combine into a sauce.
3. Place the diced century eggs and cooled tofu cubes in a bowl, pour in the prepared sauce, and let marinate for about 10 minutes before serving.
