Korean Kimchi

Learn how to make authentic Korean kimchi with fresh napa cabbage, chili powder, and garlic.

Ingredients

1 fresh napa cabbage (about 2-3 lbs)

Seasonings

Chili powder, sugar, MSG, white vinegar, seafood sauce, minced garlic, minced ginger, and fine salt, each to taste.

Instructions

1. Prepare a kimchi jar in advance. Cut the napa cabbage in half, wash it, and soak it in salted water for 24 hours.

2. Mix together chili powder, seafood sauce, minced garlic, minced ginger, salt, sugar, and MSG with vinegar until well combined.

3. Add the mixed seasonings and the cut cabbage into the jar, stir everything together again, cover with an airtight lid, and let it sit for a day or two before eating.
