1 head cauliflower, 1 cucumber, 1 carrot, 1/2 daikon radish, 1 red chili pepper (seeded and cut into segments), 2-3 bay leaves.

Instructions
1. Bring the pickling liquid and red chili peppers to a boil, then let cool. Pour into a wide-mouthed jar, add bay leaves and the spice-infused liquid.
2. Wash the cucumber, then cut crosswise into 5 cm (about 2-inch) sections; trim the hard stem ends from the cauliflower, break into small florets, blanch in boiling water, then drain well; halve the carrot lengthwise and cut into 5 cm (about 2-inch) sticks about the thickness of a chopstick.
3. Place the cucumber, cauliflower, and carrot into the pickling marinade and let them marinate for 2 to 3 hours before serving.
