Cold Beef Slices Salad

Ingredients

300 g cooked beef shank (about 10 oz)

Seasonings

200 g (about 7 oz) tender cucumber, 100 g (about 1/2 cup) white sugar, 50 g (about 3 1/2 tablespoons) each ketchup and sesame oil, 10 g (about 2 cloves) garlic, 3 g (about 1/2 teaspoon) salt, 2 g (about 1/2 teaspoon) white vinegar.

Instructions

1. Slice the cooked beef shank thinly and place in a large bowl; peel the garlic cloves, wash, crush, and mince finely; wash the tender cucumber, slice it, lightly salt and let sit briefly, then squeeze out excess water.

2. Place the cooked beef shank slices and cucumber slices in a large bowl, add minced garlic, ketchup, sugar, white vinegar, and sesame oil, toss well, and transfer to a serving plate. This dish is sweet and sour with a refreshing, light flavor—perfect as a summer cold appetizer.
