Chilled Celery with Hot Oil Dressing

Ingredients

750 g (about 1.5 lbs) fresh tender celery

Seasonings

10 g ginger, minced, 10 g aged vinegar, and appropriate amounts of chili oil, salt, and MSG to taste.

Instructions

1. Remove the leaves and roots from fresh celery, wash thoroughly, and cut straight into sections; split thicker root ends in half lengthwise to help them absorb flavor, then blanch in boiling water until just cooked, remove, rinse under cold water to cool, and drain well.

2. Toss the celery with salt, MSG, and aged vinegar, then top with minced ginger and pour over the heated Sichuan pepper oil to infuse the flavor.
