Ingredients
500 g (about 1 lb) rooster or large young chicken meat
Seasonings
15 g (about 1 tbsp) sesame oil, 15 g (about 1 tbsp) mustard, 15 g (about 1 tbsp) vinegar, 10 g (about 2 tsp) salt, 5 g (about 1 tsp) MSG.
Instructions
1. Place the chicken in a pot of cold water and boil until cooked through, then remove, let cool in cold water, pat dry, and brush with sesame oil.
2. Moisten the mustard powder with water, let it cool, then combine with sesame oil, vinegar, salt, and MSG to make the dressing.
3. Remove the bones from the cooked chicken, arrange on a plate, and pour the prepared sauce and mustard over it. This dish clears the senses and is light and refreshing.
