Mustard Duck Feet

Ingredients

350 g (about 12 oz) water-soaked duck feet, 5 g red bell pepper.

Seasonings

20 g mayonnaise, 7 g yellow mustard, 3 g scallion oil, 2 g each of Japanese wasabi and Maggi seasoning, 1 g each of salt, sugar, and MSG.

Instructions

1. Blanch the red bell pepper, then finely chop it; cut each duck foot into two pieces, blanch them in boiling water, then remove and drain.

2. Mix yellow mustard, green wasabi, mayonnaise, Maggi seasoning, salt, sugar, and MSG in a bowl until smooth, then add the duck feet and toss to coat evenly. Drizzle with scallion oil, give a quick stir, and plate. Finally, sprinkle some minced red bell pepper on top. This dish is bright orange-yellow, with a pungent, spicy, and savory flavor.
