Cold Tossed Enoki Mushrooms

Ingredients

Enoki mushrooms and yellow bell pepper strips, each to taste.

Seasonings

To taste: shredded scallions, minced garlic, light soy sauce, aromatic vinegar, sesame oil, and honey (or sugar).

Instructions

1. Bring water to a boil, first blanch the enoki mushrooms and yellow bell pepper strips for about 30 seconds, then add scallion strips, mix well, and remove; immediately transfer to ice water and soak for half a minute. Note that enoki mushrooms are very delicate, so do not blanch them for more than 30 seconds, or they will become tough and chewy.

2. Thoroughly mix together 1.5 tablespoons light soy sauce, 1 tablespoon aromatic vinegar, a little less than half a tablespoon of honey (or sugar), and minced garlic to create the seasoning sauce.

Drain the enoki mushrooms and yellow bell peppers, gently squeeze out any excess water, then add the seasoning mixture and toss well. If you enjoy spicy food, add a little chili oil. Just before serving, drizzle with a few drops of sesame oil.
