Flash-Boiled Sliced Tripe

Ingredients

500 g (about 1 lb) beef tripe tips, a small amount of chopped cilantro.

Seasonings

15 g soy sauce, 10 g sesame paste, and a dash each of sesame oil, salt, and Worcestershire sauce.

Instructions

1. Remove the outer membrane from the beef tripe, trim off the fat with a knife, and cut against the grain into thick slices; bring a pot of water to a boil, add the tripe slices, stir briefly with chopsticks, and as soon as the slices just begin to curl, immediately remove and place on a plate.

2. Mix the sesame paste, soy sauce, salt, Worcestershire sauce, sesame oil, and chopped cilantro in a bowl to create a sauce, then pour it over the tripe on a serving plate. This dish is crisp-tender, spicy, and wonderfully aromatic.
