Savory Soybeans

Ingredients

Dried soybeans, as needed.

Seasonings

Salt, soy sauce, Shaoxing wine, five-spice powder, and chopped scallions, all to taste.

Instructions

1. Pick over and wash the soybeans, then place them in a pot with enough water to cover the beans.

2. Add five-spice powder (or 3g of ground star anise), bring to a boil over high heat and cook for about 15 minutes, then reduce to low heat and simmer. At this point, add salt, soy sauce, and Shaoxing wine, cover tightly, and braise until the bean skins swell and the liquid reduces to a thick sauce. Remove from heat, let cool, and plate. Before serving, sprinkle with chopped scallions and drizzle with a few drops of sesame oil for extra fragrance. This dish is savory, crisp, and aromatic—perfect as a snack with drinks.
