Stir-Fried Bok Choy with Dried Shrimp

Ingredients

250 g (about 1/2 lb) bok choy, 15 g dried shrimp.

Seasonings

6 g salt, 10 g each of soy sauce, vinegar, and chopped scallions, 5 g minced ginger, and 1 tablespoon sesame oil.

Instructions

1. First, trim and wash the bok choy, then cut it straight into 1.5 cm (about 1/2 inch) pieces, blanch in boiling water until just tender, drain well, toss evenly with salt, and arrange on a plate.

2. Soak the dried shrimp until softened, then cut them into small pieces with a straight knife and mix with the bok choy segments. Finally, combine soy sauce, vinegar, sesame oil, chopped scallions, and minced ginger into a dressing, pour it over the vegetables, and toss everything evenly. This dish is emerald green in color with a rich, mellow flavor.
