Chicken and Pork Trotter Flower

Ingredients

500 g (about 1 lb) rooster feet.

Seasonings

20 g (about 1 1/2 tablespoons) chili oil, 10 g (about 2 teaspoons) minced garlic, and 10 g (about 2 teaspoons) Sichuan pepper salt.

Instructions

1. Wash the chicken feet and remove the tough outer skin, place them in a pot of cold water, bring to a boil over medium heat, then reduce to a low simmer and cook for about 20 minutes, remove the pot from the heat, let cool, then take out the chicken feet.

2. Using a small knife, make a cut along the back of the main bone and small toes, then remove the entire bone from the chicken feet to form chicken hoof flowers. Cover the deboned chicken hoof flowers with a clean damp cloth to prevent moisture loss. When serving, according to personal taste, accompany with dipping sauces such as chili oil, garlic paste, or salt and pepper.
