Ingredients
250 g (about 1/2 lb) peanuts, 25 g dendrobium stems (a type of medicinal orchid).
Seasonings
Salt 3 g (about 1/2 teaspoon), star anise 1.5 g (about 1 whole star), and Chinese sand ginger (kaempferia galanga) 1.5 g (about 1 small piece).
Instructions
1. Wash the dendrobium stems and cut them into 1 cm sections; pick out any moldy or spoiled peanuts, then wash and drain the rest.
2. Pour an appropriate amount of water into the pot, add salt, star anise, and sand ginger (kaempferia galanga). Once the salt has dissolved, add the peanuts and the dendrobium stems. Bring to a boil over high heat, then reduce to low heat and simmer for about 1 hour until the peanuts are tender. Transfer to a serving plate. This dish features soft, tender peanuts with a savory and fresh flavor, and offers the benefits of nourishing yin, moistening the lungs, clearing heat, and promoting fluid production.
