Boiled Shrimp in Salted Water

Learn how to make perfectly tender boiled shrimp in salted water with Sichuan peppercorns and Shaoxing wine.

Ingredients

500 g fresh river shrimp (about 1 lb)

Seasonings

15 g salt, 4 Sichuan peppercorns, 2 slices ginger, 3 scallion sections, 50 g (about 1/4 cup) Shaoxing wine, 5 g MSG.

Instructions

1. Remove the whiskers and legs from the shrimp, rinse them clean, then add to a pot of boiling water.

2. Before the water comes to a boil, add scallions, ginger, MSG, cooking wine, salt, and Sichuan peppercorns to the pot. Once boiling, skim off any foam, then cook the shrimp for about 3 minutes until done. Remove the pot from heat and pour the shrimp along with the broth into a bowl. After cooling, transfer to a serving plate. This dish is beautifully bright red, tender, fresh, and clean-tasting.
