Ingredients
1 small winter melon (about 1 lb).
Seasonings
50 g (about 1/4 cup) scallion oil, 3/4 teaspoon fine salt, 1/2 teaspoon MSG.
Instructions
1. Wash the golden pumpkin, split it in half, and cook in boiling water until tender. Immediately remove and, while still hot, use a spoon to scrape out the flesh, which will naturally form thin shreds. Set aside.
2. Add fine salt, MSG, and scallion oil to the shredded golden squash, toss well to combine, then divide between two plates and serve. This dish is vibrant in color and rich in flavor, leaving a lingering fragrance in the mouth.
