Jellied Duck Feet

Ingredients

500 g (about 1 lb) duck feet, cleaned, and reserved original cooking liquid as needed.

Seasonings

25 g cooking wine, 25 g vegetable oil, 15 g soy sauce, 10 g scallion, 10 g ginger, 5 g salt, 5 g sesame oil, 3 g sugar, 3 g MSG, and 2 star anise.

Instructions

1. First, wash the duck feet thoroughly, then boil them in a pot until about 80% cooked, remove and let cool, then debone all the large and small bones; reserve the original cooking liquid for later use.

2. Heat oil in a wok over high heat, add star anise, scallions, and ginger, and stir-fry until fragrant. Splash in cooking wine, then add the reserved broth, sugar, salt, soy sauce, and MSG. Add the duck feet and simmer until tender. Increase heat to high and reduce the sauce until thickened. Discard the scallions, ginger, and star anise. Drizzle with sesame oil, transfer to a bowl, and let cool. Once cooled, cut into pieces and arrange on a plate. This dish has a light golden color and a savory, aromatic flavor.
