Ingredients
1000 g (about 2.2 lbs) fresh tender cucumbers.
Seasonings
4 red chili peppers, 25 g (about 2 tablespoons) chili oil, 5 g each soy sauce, scallion, and salt, 3 slices ginger, 10 g (about 2 teaspoons) white sugar, 15 g (about 1 tablespoon) aged vinegar.
Instructions
1. Wash the cucumber, split it in half lengthwise, remove the seeds, and cut into long strips. Sprinkle with salt, let sit for ten minutes, then drain off any excess liquid. Mix together soy sauce, vinegar, white sugar, and salt, then pour over the cucumber and toss to combine.
2. Shred the scallions, ginger, and chili pepper, place them on top, heat the chili oil and pour it over the shredded chili, then cover with a plate and let sit for a moment. This dish is sweet, spicy, tangy, and aromatic, and is highly nutritious.
