Strange-Flavor White Pork

Ingredients

1000 g (about 2.2 lbs) pork belly or fatty pork shoulder.

Seasonings

25 g sesame paste, 25 g sugar, 25 g scallions, 25 g cilantro, 10 g sweet bean paste, 15 g soy sauce, 5 g garlic paste, and toasted sesame seeds, chili oil, rice vinegar, and Sichuan peppercorns to taste.

Instructions

1. Crush the cooked sesame seeds with a knife; chop the scallions into small pieces; cut the cilantro into sections; boil the pork until cooked through, then let it cool.

2. Place the minced garlic, chopped green onions, and cilantro segments in a bowl. Add soy sauce, sweet bean paste, rice vinegar, sugar, sesame paste, chili oil, toasted sesame seeds, and Sichuan peppercorns, then stir everything together until well combined to create the sauce; set aside.

3. Cut the cooked meat into strips about 3 cm (1.2 inches) long and 0.6 cm (1/4 inch) thick, arrange on a plate, and pour the prepared sauce over the top. This dish combines savory, sweet, spicy, and numbing flavors, creating an exceptionally delicious taste.
