Ingredients
200 g (about 7 oz) century eggs (preserved duck eggs).
Seasonings
Vinegar and soy sauce, 10 g each; sesame oil, minced ginger, and chili oil, 5 g each.
Instructions
1. Peel the preserved eggs (century eggs), cut each into 8 wedges, and place them in a bowl.
2. Add soy sauce, vinegar, sesame oil, minced ginger, and chili oil, then toss to combine and plate. Note that century eggs should not be eaten with turtle, plums, or brown sugar. This dish is tender, spicy, refreshing, and delicious.
