Honey Date Lotus Root Slices

Ingredients

Lotus root and pitted red dates, both to taste.

Seasonings

Sugar and honey, to taste.

Instructions

1. Peel and wash the lotus root, then slice it thinly and soak in cold water; wash the red dates.

2. Pour enough water into a pot to submerge the lotus root slices, bring to a boil over high heat, then add the lotus root slices, red dates, and rock sugar, reduce to low heat and simmer until the liquid is almost completely absorbed; remove the lotus root slices and red dates, refrigerate until chilled, and drizzle with honey before serving.
