Salted Edamame in Brine

Shelled edamame, as needed.

Seasonings

Salt, Sichuan peppercorns, cassia bark, and star anise, each to taste.

Instructions

1. Wash the edamame and snip off both ends, then toss them with salt, rubbing with your hands for a moment, add water and let soak for 15 minutes to enhance the flavor.

2. Add enough water to the pot, then add salt, star anise, Sichuan peppercorns, and cinnamon stick. Bring to a boil and continue boiling for another 5 minutes.

3. Add the edamame and cook until tender, keeping the pot uncovered throughout or the beans will turn yellow. Once done, rinse under cold water to cool them down, which helps preserve their bright green color.
