Pig Ear Slices in Chili Oil

Ingredients

Pig ears, as needed.

Seasonings

Red chili oil, scallion whites, fine salt, MSG, white sugar, and sesame oil, each to taste.

Instructions

1. Wash fresh, large pig ears thoroughly, place them in a pot of boiling water and cook until just tender, then remove and press flat under a heavy weight, allowing them to cool naturally at room temperature.

2. Slice the cooled pig ears into thin pieces. In a bowl, combine white sugar, salt, red chili oil, MSG, and sesame oil to make the seasoning sauce.

3. Toss the sliced ear with the prepared sauce and shredded scallions until well combined, then plate and serve.
