Ingredients
2 bitter melons, half a red bell pepper.
Seasonings
Half a scallion, minced garlic, white sugar, light soy sauce, salt, vinegar, and sesame oil, each to taste.
Instructions
1. Wash the bitter melon, remove the seeds and white pith, then slice it diagonally into thin strips; julienne the red bell pepper and scallion; mix minced garlic, light soy sauce, sugar, salt, vinegar, and sesame oil in a bowl to make the dressing and set aside.
2. Bring water to a boil in a pot, add a small spoonful of salt and a little oil, then blanch the shredded bitter melon for about 15 seconds.
3. Remove the bitter melon shreds and immediately rinse them under cold water, then drain well. Top with red bell pepper shreds and scallion shreds, drizzle with the prepared dressing, and toss to combine. For a more distinctive flavor, you can also add some chili oil and mix well.
