Honey-Glazed Fatty Pork

Ingredients

200 g (about 7 oz) of large honey peaches, 20 g (about 2/3 oz) of honey.

Seasonings

20 g white sugar, 20 g osmanthus sauce, 50 g peanut oil.

Instructions

1. Peel the fat peaches, cut them into rolling knife chunks, coat evenly with dry flour, then deep-fry in oil heated to 60% hot (about 350°F/175°C) until golden brown and cooked through, then remove.

2. Add oil and sugar to a wok, stir-fry over medium heat until the sugar turns red, then add water, more sugar, and honey, simmering for 2 minutes. Add the peaches and osmanthus sauce, continue simmering until the sauce thickens, then transfer to a plate. This dish has a glossy golden color and a sweet, refreshing flavor.
